Freeze-Dried Candies and Treats

What's freeze-drying you ask? Well, let me tell you, it an amazing process! The steps depend on what's being freeze-dried:

​

Freeze-dried foods:

1. The food is frozen, then placed in a strong vacuum.

2. By the process of "sublimation" the water in the food is removed. Sublimation is the process of turning liquid into a gas. So, the water turns to ice vapor while the vacuum pulls the vapor away from the food. When packaged properly you end up with a food product that is shelf-stable for 25+ years!

Freeze-dried candy:

​

1. For candy, no freezing occurs. Instead, some candies need to be heated first, then placed under the strong vacuum.

2. Then, the same "sublimation" process occurs to remove the water content.

3. When candy goes through this process, it completely changes the texture and intensifies the flavor. The sugars in the candy expand and create light, airy, and crunchy textures.

Freeze-dried candy allows those with braces, dentures, etc. to enjoy treats they otherwise could not. Hard candy turns light and airy and chewy candy turns crunchy!
